I've been on the road too much.

What? Did I really only say that? I never expected to hear those words come out of my mouth. But they did. And that'southward simply how I currently feel.

Flying hither and there and talking all nigh Admittedly Avocados and how every single person should probably ain a copy because it's expert for their well being. Simply I miss being abode. I miss sleeping in my own bed. I miss eating dinner with my married man every night. I miss my trivial true cat who probably has no thought that I'thou gone and prefers it when I am because she totally likes Thomas better. And I miss the act of leisurely cooking. The act of taking fourth dimension to wake up, hang out in bed watching some National Geographic show on penguins or something, and and so making my fashion to the kitchen a scrap afterwards to whip up some brunch for me and my dear. (hunny? I don't know which it is. Mom – I'm sure I'll get a text from yous clearing this all up shortly)

One weekend recently, when I actually was home, I made these seriously freaking delicious Cheddar Chive Popovers for breakfast. The recipe comes from one of my newest cookbook additions Pancakes: 72 Sweetness and Savory Recipes for the Perfect Stack from Adrianna of A Cozy Kitchen.

The book is packed to the skirt with sweetness and savory ideas for pancakes. And while I know popovers aren't a traditional pancake, it'southward one of my favorite recipes from the book. Adrianna knows her pancakes. This girl could whip upwardly a mean brunch with her eyes closed and impress whatsoever invitee. Each recipe in the volume looks better than the terminal (I hateful how is that even possible) and you of a sudden feel the need to eat pancakes in every way shape or form for breakfast, luncheon, dinner and dessert.

This book has it all. From basic buttermilk pancakes to high german apple popovers to smoked gouda sweet tater latkes, to curried cauliflower fritters, I mean the possibilites are endless.

I had the hardest time choosing what to make start. So luckily my facebook fans picked for me. Hands downwardly the Cheddar Chive Popovers won. People were pumped, and then was I.

These popovers are non merely delicious, but they are filled with chives and freshly grated cheddar cheese. ii of my most favorite things in life. Plus they are crazy impressive looking when they start come out of the oven and are literally puffed up then high. If nosotros're friends over on instagram you'll know exactly what I'm talking nearly. Omg they are fun. You should make them. And if you're a pancake lover like myself, you lot're going to need this book!

Cheddar Chive Popovers + A Giveaway

  • one ½ cups all-purpose flour
  • ¾ teaspoon salt
  • 3 large eggs at room temperature
  • i ½ cups whole milk at room temperature
  • 1 tablespoon fresh chives minced
  • 1 cup sharp cheddar finely grated
  • Preheat the oven to 350°F. Generously coat a muffin pan with the vegetable oil or spray and set bated.

  • In a medium bowl, combine the flour and salt. In a measuring cup, measure milk, add the eggs, and beat until combined.

  • Cascade the moisture ingredients into the dry ingredients and mix until nearly smooth. The batter will be thin with a few lumps. Fold in ½ cup of the cheddar cheese and the chives. If yous'd like, y'all can transfer the batter to a large measuring cup or bowl with a spout; this will make information technology easier to pour the concoction into the muffin wells.

  • Preheat the muffin pan in the oven for 2 to 3 minutes. Remove the hot pan and carefully pour the concoction into each well, filling them a petty more than halfway. Top with the remaining ½ loving cup cheddar cheese. Broil for thirty to 35 minutes until tall, puffed, and golden brown.
